Serious Transfer Question!! Please advise!

Here's the deal. I'm an average student. I have an ACT score of 24. I went to a four-year university in Wisconsin my first year of college. My GPA was a decent 3.0 my first semester and then fell a little due to family issues (my mom has a serious case of M.S. and I had to be there for her). I'm paying for ALL of my tuition by working full time and going to school full time. I transferred to a community college and have been doing well on top of working two jobs. I'm no genius and am happy with my GPA staying around 3.0. My major is in elementary education.

Now...
My biggest issue is transferring as I have a lot of unanswered questions. I would like to transfer to a school on the east coast (mainly VA or NC) BUT these schools don't offer an Elementary Education major. Instead, they offer a BIS (Bachelors of Interdisciplinary Studies) with a minor in education or something of that nature. I am unfamiliar with that program and am concerned that if I earn my AA for education at the community college only my gen-eds will transfer and I will be right back at the beginning.

So!
Would I be better off not finishing my degree at the CC and transferring my 35+ credits now and not waste more time taking classes which may or may not transfer?

Should I change my major at the CC to a General Studies major because that may transfer more smoothly?

Or should I stick to the plan of getting my AA for education at the CC because then I will at least have a degree and not worry about it transferring? Or perhaps having a degree may look better when transferring to a University?

I would LOVE any information you provide. I apologize for writing a novella about my life right now but this is all confusing. I've talked to many people without receiving a straight answer.
