shift in person, and essay questions in general

on my academic essays, it is encouraged to always use "one" instead of he or she when referring to a generic person in writing. (i.e. a hypothetical situation involving someone who doesn't exist.) is this true on the SAT essay as well?

also, is switching from "one" to "they" an ungrammatical change in person? if so, does that mean if you start a sentence with "one" every pronoun after that has to be "one" or "one's"?

On the SAT Writing section’s multiple choice questions, yes. On the essay, it doesn’t really matter.

Using “he or she” when referring to “one” is correct as well.
