should I leave intended major undecided?

When colleges ask what major I intend to go into, should I leave it undecided so that they can't judge me based on it? I think I'll probably major in English, though it could change. Because this is a popular major, would they be more likely to reject me than if I left it blank?

No. Most rising freshmen aren't decided. Often, it just allows the adcoms to know your preferences. Some colleges require admissions into specific programs and this info would be necessary. Eng would go into Arts and Sci and isn't necessary to state. It won't affect your admit chances

I'm in kind of the same boat as blindkite, but I may want to major in psychology.

I've seen on apps where they ask you to check 2 or 3 potential majors. Would it look weird to check 'undecided' and psychology? In that I'm leaning in that direction, but not yet decided?

It is usually best for you to declare a major during the admissions, even if you are undecided. If they ask you for more than one choice, list a 1 or 2 choices, and then you can list "undecided" as your 3rd choice. Remember, in many cases you can change your major prior to (or shortly after) matriculating, so don't get too caught up in this.
