I am Asian but I am also adopted by White parents, so I have really American first and last name. I've heard that it is harder to get into colleges if you're Asian. I don't wanna lie, so maybe I shouldn't say anything at all. Will they suspect something if I leave the box blank?

“I’ve heard that it is harder to get into colleges if you’re Asian” This is an oft-debated point and only focusing on the most selective colleges. I’m one who believes the anti-Asian bias is actually anti-boring-applicant bias.

The option to leave it blank is there because the colleges wish to offer it. You can opt to use it for whatever reason you choose w/o violating your conscience. Will it matter at all if you use it or cite Asian? I don’t believe so at all. And that’s what I’m telling my kids too.

I’m in the same situation as you, but another question asks for place of birth, and it’s harder to avoid that

I would leave it blank. There are many reasons to leave it blank, being Asian is the least of it. Many people think race should not be a factor so they don’t answer the question.
