Should I take a third year of science?

I'm a HS sophomore. I'm planning on taking multiple AP classes in the next two years like US History, Spanish, English, Gov/Econ...I'm in AP Euro this year. My school only requires 2 years of science to graduate (biology and chemistry) but I know most UC and private colleges recommend or require 3 or more years. Should I take physics junior year even if I'm not interested in science or just focus on taking APs? What would look better on applications?

I would definitely take a science! Even if you don’t do physics another science like anatomy or geology would be useful and would also look a lot better. You could also take AP Chem or Bio (if your school offers it) :)

First, you will not be applying to schools that require 3 if you don’t take 3, right? Second, even if only 2 are required, you won’t be competitive at many places without 3. No matter the major, most colleges are looking for overall college prep completeness and that includes the sciences. AP’s are good to take too, they are part of taking a rigorous program if they are offered at your school.

So I should take Anatomy or Physics even if it’s not AP or honors and my major doesn’t involve science?

I have advised all of my kids to take a science each year of high school. Physics is a great course to take. If you are really not interested in doing Physics and want to do APs you could take AP Environmental Science. If you loved Biology or Chemistry you could take the AP version. If you struggle with sciences and you think it will pull down your GPA significantly I may advise differently.
