Should I update my CV?

I will have some changes in my work which is different from what I put in my CV/applications and submitted to schools last year. I have been working in industry and soon I will be working in academic research as well. My interviews are coming within few weeks and I will definitely mention what I will be doing in my new position during the interview. Should I also give interviewers and DGS my updated CV? Do they actually care? Or it won't make any difference? Thanks for your opinion.

Personally, I don't think that they will care much, especially since it's nothing that hurts your credentials or anything.

At the same time, for completeness' sake, I'd send the admissions people your updated CV - if you have a few minutes to just add a few more lines to your CV. (Again, if not, I really don't think it will make a difference either way)

After I got a number of interviews already our group submitted a manuscript to a journal with me as the second author. I certainly made sure to send the schools information about the new submission. In my mind, it might have made my application a tiny bit more competetive (not sure though...) and that's why I took the time to e-mail this to all the schools I will soon be interviewed for.

Given the routine types of work you have been doing I don't think an updated CV would help. If it were to include new publications or conferences or something like that, it might be valuable.
