You can pretty much say anything on a website, but you have to be honest when reporting numbers to outside organizations and of course a judge.

Agree and as ucbalumnus has mentioned a few times, colleges want each race to be comfortable with the numbers they see. For Asians, the perception is that colleges like Harvard have a soft quota of 20% or so for Asians. So Harvard showing 25 on the website and actually reporting 21% probably has that in mind.
Also the reporting on how wealthy (or not) the campus is.

The full history is more telling. In the early 70s, Stanford students petitioned to remove the Prince Lightfoot Indian mascot and replace it with something less culturally offensive. The winner of the student vote was the Stanford Robber Barrons (see https://archives.stanforddaily.com/1975/12/05?page=1 ), which would be both the mascot and team name. The remainder of the top 4 were Stanford Sequoias, Stanford Trees, and Stanford Cardinals. Athletes also made a petition to switch the mascot to the Stanford Griffins, which the university also liked. The administration was not as happy about the student voted Robber Barron mascot since it portrayed Stanford’s founder and history negatively, so they did not implement it. The band also wasn’t in favor of Robber Barnons. Instead the band starting having half time shows with a variety of different mascots, including things like the Stanford Steaming Manhole Covers and Stanford French Fries. The Stanford Tree mascot was especially popular at these half time show, so the band kept it. The university officially reverted to the Stanford Cardinal (the color red, not the bird).

Yes, they always double or triple count multi racial students. Was told during visits at both S and H. Ex-admissions members also said so. All driven by ranking and state/fed disclosure requirements.
