I am planing on taking SAT Physics, Math I, World History, Italian, maybe biology. The universities i am planning to apply don't have subject test required, but if i do, do i significantly increase my chances over other applicants ?
(I like economics, political science and international relations, but i want to take them and study very hard for them all summer if they really help me getting admission)

For most schools, it is not likely to have much impact by submitting additional SAT2 scores particularly if they are not required. But it definitely would not hurt if you can get good scores from them. You may also pick the best 2 or 3 scores to submit for your applications. Nevertheless, it may be wiser to focus on a few subjects and score the best you can than spreading your effort in multiple subjects and score mediocre.

Don’t bother taking more SAT IIs than what is required. Getting good scores on the SAT IIs won’t “significantly increase” your chances over other applicants. If any colleges require two, then take two (for those, you may want to take a math and science). A third is all right. Outside of that though, don’t take anymore, because taking tons of SAT subject tests won’t give you a boost in college admissions. Most college admissions are holistic, and they will emphasize many more things than just standardized test scores. Save the money. There are more important things to worry about than SAT IIs.

It will increase your chances. If you have the money and are likely going to do well, then I see no reason for not writing the tests.
