OK, so I took 3 subject tests and got what I thought were decent scores, but then I looked at the percentiles and those don't look too good. Does anyone know how admissions offices view these scores?

Percentiles are not relevant to subject tests. They are skewed because most who take subject tests are those applying to the high ranked colleges that require them and thus majority who take the tests are usually those who will score high. That is reflected in the fact that at times an 800 in math is only the 80th percentile. What matters is proficiency in the subject and that is proven by score not percentile and if you have a high score that is all that is needed.
