Considering I have a 2200 on sat reasoning and a 780 on bio, would a 680 lit hurt my chances?? Or neither hurt nor help me?

Stanford asks that you submit all your scores. The 680 lit isn’t great, although I seriously doubt it would be a dealbreaker. Do you have any more SAT2 scores?

Stanford recommends sending at least 2 subject test scores. Also, Stanford allows score choice for SAT2.

Considering that Stanford lets you use score choice for SAT subject tests, I wouldn’t submit a 680 on lit.
Just because they recommend that you submit two or more subject tests, a low score will probably hurt you more than no score.

If you get rejected, it very likely will not be because of the 680 on lit.

Take the path of least regrets. If you submit the 680 and get rejected, will you feel regret? Similarly, will you feel regret if you do not submit the 680 and get rejected? Determine which will cause you the least regret, and take that course.
