Supplement essay--what class would you teach

I am just curious, for this essay prompt, are they looking for something serious and academic, or could you write a lighthearted essay about things that are lacking in society? Or something political? So, in other words, are they looking for creativity or practicality?

Probably whichever you value. Your answer will involve creativity regardless. Create a class that reflects you academic values, interests or/and outlook on education. View it as a proposal of some sort. For example, the Voluntary Core at Emory was started by several professors that believed that the humanities and certain core knowledge areas still play a role in highered and are indeed lacking in the curriculum. Surely they had to be able to write about the political and ideological reasons behind creating this core (and its component courses) as they sent the idea up for funding. Your course should likely reflect what you want to learn and why. More than likely, this prompt is to get you to research our current offerings (and exclude them as a choice while also getting educated on the curricula) and then generate something somewhat novel based upon your own intellectual interests (which could be politically or ideologically motivated. Nothing wrong with that).
