What do pre med students do when they are taking years off before med school that would make them better applicants?

Peace Corp
Army

TFA

Americorps

work/volunteer full time in a public health-related field (like diabetes education for Native Americans, mental health advocacy)

teach high school/middle school math & science in an rural or urban underserved area (you can do it without TFA–some states run their own programs. And there are alternative teacher certification programs in almost all states.)

tutoring/mentoring disadvantaged youth

basically any job that pay for rent & groceries while still doing significant volunteer service
