Would taking Spanish my senior year, which is next school year, be counted as the third year of foreign language? I already took the other two years of Spanish in my freshman and sophomore years.

I’m not absolutely sure, but I think some colleges require the foreign language classes to be consecutive.
^ Post #3 is incorrect. 3 years means they want you to attain the level of Spanish 3.

It’s fine. They DO NOT have to be consecutive. I had Spanish in my freshman, sophomore and senior years as well and was perfectly okay. You will too.

Yes, assuming you take level 3 or higher.
I know of a few colleges who preferred you to take the classes consecutively, as in having no breaks between the school years. Whether it mattered to them during the application process, I don’t know. But this was a few years ago and things have probably changed at those schools.
There are probably several things that one college or another would “prefer.” Whether or not that translates into reality based upon an individual high school’s requirements/scheduling is another matter entirely. If a college’s preferences are not met through no fault of the student, a line from the GC in the Secondary School Report should cover it.
