How important are application essays? I'm applying to NYU and they have 3 supplement essays which I find quite annoying to write perfect on... Do they take essays into consideration when applying for acting???

Yes, they do. The admissions office sees the essays (and transcripts, resume, SAT’s, recs etc.) and the theater dept. sees your audition and resume. You have to pass both sides of that review to get in. So your essays are important. They don’t have to be “perfect” but they have to show who you are–your intelligence, honesty, aspiration…whatever the best of you is.

You have to be accepted for regular admission into the school, but the theatre dept really only cares about the audition. But you dont have to construct your essays for theatre admission.
