I was just getting together my “work food” for tomorrow - because I exercise in the morning before work I do not eat breakfast at home so I pack both my breakfast and lunch.
I like to change breakfast up! Often something with a good bit of protein. But sometimes I love to bring a good slice of crusty bread and then various toppings for it after I toast it at work. Might be sliced strawberries and PB. Classic avocado. Mascarpone and apricot jam. Pimento cheese! Of course a classic layered avocado, summer sliced tomato, slice of bacon or egg - or both! That’s more of a sandwich though!!
But a favorite is a good nutty/seed bread toasted more than medium, slathered with a good butter and then topped with freshly shredded parm or Parmesan Reggiano and some freshly grated pepper. Yum. I love a good savory toast!
How do you like your toast??? Favorite toast toppers? Classic butter only?
I don’t think this is technically toast but it’s a childhood treat that we make on occasion…good rustic (chewy) white bread (French/Italian/country - sliced), spread some butter and add a good amount of shredded Monterrey Jack, broil in the oven until cheese melts. Serve with hot cocoa or tea. On a cold day, this is absolutely delicious!
About twice a week I have an avocado spread on toast for lunch (or occasionally for breakfast), a tasty meal with decent amount of fiber.
I mash up half a soft avocado with 1T hummus and 1T chia seeds and a bit of everything-bagel seasoning then spread on toast. Often it’s Dave’s bread, but we like to mix things up by having other breads from bakery section of grocery store. Sometime I add halved cherry tomatoes on top. It’s not a great candidates for toting to work, but it works well for those that want something different at home.
I also like hummus on an everything bagel. With lettuce and tomato (or cherry tomatoes) or roast red peppers. (Or if I’m lazy red peppers sauteed in leftover bacon grease. I usually sprinkle extra seeds on it since they tend to fall off, so I collect them in a dish and pour them on anything I think could use them. Chives are good too.
ETA: not brown waxy things from ice cream parlors but actually chocolate (or other flavors). They start to melt into the warm bread. Oh, and I’m a sucker for anything sweet, especially chocolate!
I’m also a fan of the savory, but lately when entertaining for brunch I’ve made compound butter with hot honey (a very college confidential ingredient!) I don’t like honey so it never tempted me (which was by design). But this weekend my kid had a friend over, and she doesn’t do spicy, so I made a maple butter compound instead (real butter and local maple syrup). It was like crack! So delicious that I was dipping in pieces of bread, then pieces of salted popcorn, then just my finger, and usually I can stay away from non-chocolate sweets with some measure of discipline. Two ingredients…try it!
I agree with @ChoatieMom. Pure joy is toasted sourdough with salted butter.
I like avocado toast and will top it with radishes, coarse salt and tomato. Sometimes I’ll add a sliced hard boiled egg.
When I’m sick I like toasted sourdough or rye bread with almond or peanut butter.
Gosh, everything you suggested sounds good. I always loved peanut butter/banana slices. But these days, I’d probably lean more towards your savory choices.
Also agree with others that sourdough with a high quality butter is always win/win.
