is writing about volunteering (or mission trips) too cliche for an activities essay? as in, what EC has been the most meaningful to you?

Nope. ^^ :P ^^ :P

If you are clearly very passionate about it, and it clearly shows in the way you write about the experience, nothing is cliche. If you can hold the attention of your reader with your essay, whatever the topic may be, then you have accomplished something incredible.

You shouldn't worry too much about it being cliche if your personel style is used in the essay.
Do make sure that the essay does not end on an anticlimatic note though.

If you gained a truly unique lesson/experience from something, then no activity is too cliche.
