One of the Princeton supplements is an essay about something/someone that has helped you define your values, and I’m writing about my Italian teacher and her significant influence on me. I was wondering if it’s considered okay/proper to use your teacher’s actual name in an essay? If so, should I use her whole name or abbreviated (e.g. Ms. C)? I don’t want to keep referring to her as “my teacher.”

You should be fine, as it would make the essay much more personal
Yes, absolutely use the teacher’s name. Just be sure the essay is about you––not the teacher.
