9th grade I took AP Human Geo, easy class, passed with a 4
10th grade, right now I’m taking AP World and AP English Lang. They aren’t too hard for me.
Next year I want to, for sure, take APUSH, AP Enviro, and AP Seminar (a part of the AP CAPSTONE program)
Senior year I want to take AP English Lit, AP US Gov & Politics, and AP Research (CAPSTONE)
I’m also in Girl Scouts and want to be able to still participate, and take a leadership position in junior and senior year.
So I’m not sure if I should take it junior year because it could be too much for me to handle.
Senior year, I’m worried about it coming into conflict with college apps (I want to go to a liberal arts program/college)
I don’t want to drop AP Enviro because the only other options would be another AP science (not too strong in chem/bio/physics) or a CP class. No choice for an honors science next year or else I’d jump at it.
Advice on which year I should take it is much needed/appreciated.
I could also just wait til college, but I’d like that as a last resort.

Nobody but you, and perhaps your parents and GC, knows your abilities. Further, the workload in the class is highly dependent upon the teachers. IMO, it’s really flipping a coin if you want to take AP Psych junior year vs. senior year. I don;t think the workload for that class is really going to be that onerous. Your call.
I would drop AP Seminar and Research. While they sound impressive, these are new APs offered by very few high schools, so IMO taking more established APs would look better. Does your high school any other AP courses? How about AP Calculus or Statistics for senior year? Or AP Psych and Econ if you want more social sciences. You should keep AP Enviro since you’re weak in the core sciences, but top LACs still want to see CP bio, chem, and physics.
After thinking it through I’m dropping AP Capstone (I decided this a few days ago, before I saw your comment, your reasons are basically why I dropped it).

Most colleges want you take science. I would take a bio/chem/physics, preferably at the honors level.
Have you reached a foreign language up to level 4/AP ? (this would be especially important since you seem to be headed toward a more HUmanities/Social science path).
AP Macro is a half-year class, the other side is AP Micro. AP US Gov is also a half-year class, the other half is comparative government. Of course you could take half year Macro, half year Gov, which makes sense. It’d free up a slot in your schedule.
If you’re considering Humanities/social science in college, your choices are either a CP science class (marine science, Anatomy&physiology, any of those?) OR another class in humanities/social science.
An optimal schedule for a social science/humanities major:
AP English Lit
AP USHistory
Trig/Math Analysis
Foreign Language 4
CP science you’ve not taken yet (bio, chem, or physics)
Journalism or Speech
Senior Year
H. English senior seminars
AP Enviro
Statistics (maybe AP)
