From the given info, what are my chances of getting into the top 20/30ish schools like...NYU? What schools should I try?
Or do I have no hope of getting in such schools?

Your GPA is a bit low, but from kids I’ve seen go to NYU you could likely get in. Are you looking at a specific part of the country? Also - what do you want to major in? I’m from the south, and you could probably get in to a Vandy or Wake Forest with what you have.

I am from the northeast coast. I have not exactly decided yet but I am interested in business, economics, and health.
My dream school is Emory, but that is a huge reach. My cousin goes there, but I don’t know if that will really help. Thus, I’m focusing more on NYU and McGill now…
Do you know about kids who got into schools like these with a low GPA but high SAT/ACT score? Or due to leadership and extracurriculars?
As for Vanderbilt and Wake Forest, not many people from my school apply there (only 100 out of about 1500ish people from my school within the last few years applied there; this is the same for both schools)
Despite that, Wake Forest might be more reachable for me than Vanderbilt…but I’m concerned about the infinitesimal amount of Asians there, since I am Asian myself.

If you are applying to Stern at NYU, you should get your GPA up as much as possible. Get around 2200 on the SAT
