Well, I'm a junior, and I haven't even started visits yet, so my list is longer than it will actually be but here goes:

MIT
Yale
Swarthmore
UChicago
Cornell (alma mater mei matris!)
Dartmouth
Carnegie Mellon
UMich
OSU (my state shool. Also, I hope no one kills me for having this and UM)
Georgetown
George Washington (alma mater mei matris!)
WashU
Vassar

Also a Junior here, and I'm trying to make my list, and yet every college seems lame in comparison to Brown :) but here's my list:

BROWN

....(this is my anticipation of completing my Brown app)

....(this is me waiting for my decision in Mid-December)

Amherst

Carleton College (Safety)

Sarah Lawrence College (Safety)

University of Minnesota (accepted)
Covenant College (accepted)
University of Florida
Florida State University
University of Colorado
and maybe... maybe... Colorado State... if by some weird chance I don't get into CU-Boulder.

Yeah, but I went to the Carleton Liberal Arts Experience, which, I think in hindsight, was a program to encourage African-Americans to apply there. Like to be accepted to the program is harder than gettting into Carleton itself (17% versus 23%). They really wanted me to apply! That's why it's a safety for me.

^Greater than 50% acceptance, and usually greater than that, depending upon your stats. If you have great stats, Sarah Lawrence might be "safe match" but not pure "safety." No school with <50% acceptance can be considered completely safe.

I'm applying to a lot of different places. Such as:
