Should I take a summer course before college to brush up on chem and physics, will I be at a disadvantage if I was away from the subjects for 2 years or so?

It’s really up to you. If you feel your grasp of the material from high school was shaky when you took it, then possibly a refresher might be a good idea.

However,in college everyone is starting over and intro level courses don’t really require much (any?) prior knowledge of the subject.

ABSOLUTELY NOT.

It’s you’re last, true, just-like-it-always was summer at home. Take the time to earn some money, hang out with your HS friends and enjoy yourself and your family. It’ll be the last time it’s ever like this for you. People go through an insane amount of personal growth during freshman year. It’s just the way it is, it’s neither good or bad. You’ll still be friends with the people who matter in a year, 3 years, 5 years, but you may be surprised at who ends up mattering. People grow apart, find summer jobs or internships back at school or halfway across the country, parents who are now empty nesters move, and so on. Wasting your time auditing (because you absolutely should not take it for credit) a summer school class that you’re going to take again in the fall is very, very low yield.

I’ll second bigredmed on this one! You earned a break after working hard in high school. Live it up! You’ll have PLENTY of time to focus on school in the fall.
