What should I do? Econ=Intended Major, but Math=Strength

So as you can tell from my username, I like and perform decently in math. However, I love economics, especially behavioral. Also, my dad happens to be a finance professor, so I was quite influenced by that.

The problem is that I have no way to show colleges that I have had an interest in Business/Economics. I am planning to do some research, as I have finished the basics of Economics (AP Macro/Micro Economics) by myself, but I've never heard of any high school student doing this, so I don't even know how to start. Our specialty guidance counselor sucks as he was just appointed this year from a history teacher O.o...

On the other hand, I have won several local awards in math, part of the State ARML team, have qualified for AIME two times (both times I took the AMC and missed USAJMO by a question) without that much effort, so I know I can go further...

BUT, I'm pretty SURE I want to major in Econ and maybe minor in Math or Comp Sci...
So what should I do to let colleges know I am interested in Econ? Would colleges mind if I continue to show passion in both math and Econ? My dad emphasizes that he sees student who were the best in math as an undergrad/high schooler tend to do better later on in grad school and he wants me to continue on in math.

PS: Our school doesn't have any economics related courses except regular econ, which you can only take as a senior (currently sophomore), and is pretty pointless because I self-studied AP Econ...

Well if you’re into business than try joining something like FBLA. Honestly, there isn’t that much of a way to show an interest in it but by perhaps doing CC courses in Econ.
Maybe show interest in your app. You’re only a soph anyway.
