Whatcha Cooking? - Comfort Food Edition

Made manicotti for the first time yesterday because store was out of jumbo shells. But boy are they harder to stuff than stuffed shells! (Yes, I’m that idiot who tries out new foods when guests are coming over). But it worked out fine (ziploc bag “piping”) and tasted good.

It was very good and easy. I adjusted the cheese amount and used what I had. Made it with ground beef, sliced unsmoked provolone slices cut small and 1cup shredded mozzarella. I found it a bit rich but it tasted like a special meal you spent all day cooking.

My aunt sent me home with the ham bone and leftover ham, so I’m making ham, green beans & potatoes for dinner tonight; definitely a PA dutch comfort food meal :yum:

We haven’t been eating beef lately, but I made corned-beef-less cabbage and veggies, with enough pickling spice and guinness in the pot to make it very tasty. Made the classic Silver Palate horseradish cream sauce. Didn’t miss the beef, though I did make turkey bacon on the side for protein. I was going to make fish, but I was unexpectedly away the last few days because my sister was in the hospital, and got home this afternoon just in enough time to put this together.

I made stuffed pork loin with apple, mushroom, spinach, and bacon, I skipped the brandy.

it’s served with roasted Brussels Sprouts and mashed potato because they were both on sale, it’s pretty tasty and tender.

Maybe, pork loin was on sale at Costco recently and that’s why I got it. It’s a good way to get rid of a big chunk of meat.

Meatless dish, I’m going to serve this with some protein, but eggplants and rigatoni were on sale.

Looks delicious. I made something similar but I made my own ricotta. Very easy to do.
