I made this today, I got chicken on sale, 8 pieces of chicken breast with bones, first time I realized the difference between chicken tender vs chicken breast, especially after I had to filet out the bones out. I used leftover potato chips as coating instead of panko because my daughter is gluten free. It’s was very good.
We had chicken Corden blue last night too! Only I didn’t make it from scratch, I got it from Costco! Lol
I slow cooked a brisket in the oven yesterday. At eight pounds, it is the gift that keeps on giving with leftovers. And TLAT made fresh gravy.
The corned beef and cabbage I made on Thursday provided leftovers for dinner on Friday. H made himself some kind of hash with some of the beef and potatoes for breakfast yesterday morning and finished the corned beef by making a corned beef and swiss on rye for today.
Corned beef hash is manna from heaven. I have been known to make corned beef hash, vacuum seal it, freeze it and mail it to hunting buddies.
I rarely bake bread or anything sweet. That being said, I’m going to try and make this bread (recipe below) for Easter dinner. It’s a bread that my aunt would often make for Easter. (My mother was a health food fanatic and we rarely had anything with sugar in our house.)
Anyone care to share tips on ways to make this work? I’m thinking of doing a trial run next weekend.

Broccoli cheese soup, broccoli was on sale 3lb for 99c, and I had lots of chicken broth yesterday., it’s a good way to free up my freezer.

I mixed up the NYT’s Salted Tahini Chocolate Chip cookies yesterday for something coming up this weekend - the dough is refrigerated and I won’t make them until later in the week because I’ll want to eat them!
Well the verdict is One lazy pot lasagne is excellent. H is the chef but I surprised him with this a few days ago. Frankly exceptionally easy and fast and tasty -cooked in a pot on the stove that I could put in the broiler. Broiler took 6 minutes.

I made this very simple snack cake/breakfast/brunch option this weekend and it was 10/10. So easy - no mixer needed just a whisk.
Lemony, crispy edge, moist and tender inside. The corn meal really works! Be sure to rub the lemon zest and sugar together as directed - it really makes the difference!
This will become a go-to recipe for me.

D17 has requested homemade tomato soup for dinner. In the past I’ve made Ina Garten’s version with orzo but don’t want the added carbs from the orzo. While I know I could just leave the orzo out, I figured I’d ask here to see if anyone has another tried and true tomato soup recipe to share.
I can’t vouch for a specific recipe but google Indian spiced tomato soup. When I was a kid my mom would add Indian spices to even canned tomato soup and it’s a great combination. Adding flavor without carbs or calories (though there might be a bit of added oil if the process you choose uses fried whole cumin and mustard seeds).
I believe I’ve made this one before and really liked it. Not sure about edits if you use canned tomatoes. I have a couple tomato soups saved so trying to remember which were winners!

@UnsentDementor thanks for the rec but not sure I’d like the Indian influence. I’m not a big fan of Indian food for some reason so I’d hesitate to add the flavors as I’m looking more for the traditional flavors of tomato soup.
@abasket that recipe looks great. I actually have crushed tomatoes from last summer’s garden in the freezer, but not sure that I have 2.5 lbs worth. I’m going to save this recipe to use with this summer’s garden. I only have one 28 oz can of tomatoes in the pantry so not enough for this recipe.
Also cold here today. Soup sounds great. H made himself chili over the weekend while I was gone (“himself” - meaning I wrote down directions, set out the spices, answered a few texts and Facetimed with him to make sure it was “simmering not boiling” - haha) so I thought this one - a staple in our soup rotation would be good.
