Jacques Pepin said the same thing, he said he prefers them better than bacon. I do save some of mine in the freezer to experiment a bit.
Recipe for the soup please, if it’s not too difficult? That sounds really good.

I read the reviews and noticed one person suggested adding fish sauce and sugar for a more authentic taste. Per that note, I added a generous teaspoon of fish sauce and a teaspoon of palm sugar (we cook a lot of Asian food so I have a jar, but regular sugar would be fine). For noodles, I used a 4 oz pack of ramen noodles instead, without the spice pack, because I didn’t have any rice noodles. I also added extra shredded chicken because I felt like it needed more after I added the two cups. Oh, I also added a diced red pepper in when I sauteed the onions. Next time I will add some spinach or even bok choy.
I just had some leftovers for lunch and it’s even better today, I think the flavors blended better over night. It is definitely spicy so cut back on the curry paste depending on your desired level of heat. It actually didn’t seem as spicy today. I did use all 4 heaping spoonfuls.
@4kids4us - thank you for the recipe. I cook a lot of Thai food and this looks great. I will make it next week when our weather here in San Diego cools down again!

Update: it was great! I had to estimate the red curry powder (instead of paste) and after tasting it- doubled the amount and doubled the cilantro and basil (they were also powder) and next time will half the onion amount. Used some sugar and fish sauce also. H who is usually the chef was impressed. Very quick meal prep and cook time. Total 40 minutes start to finish. Perfect for cold day here.
I made the Marry me chicken last night. It was great on a cold, rainy night. I did add roasted peppers that needed using up and roasted tomatoes that were in the freezer. I served it over potatoes that also needed to be used up. It came out quite yummy!

Made this last night. I browned some hamburger with onion & garlic instead of sausage, and used rotini noodles. It was great, and super easy. H loved it too. Lots of leftovers

I just saw a video on Facebook for something that looked like a Mexican lasagna.
The steps were:

Sauté onion and ground beef – add jalapeños (from a jar), tomato paste (?? might be taco sauce??) and about 3 cloves of sliced garlic

Make a white sauce, add spices and then melt a bunch of American cheese into the white sauce

Layer ground beef mixture, American cheese slices, cheese sauce and lasagna noodles into a pan

Add shredded cheese on top

Bake, then top with avocado before serving

We made Marry Me Chicken, and would warn others to cut back if they use red pepper flakes, as Chili Flake substitute…
Husband and I made together, agree it was quite easy and delicious.
We were planning on having grilled chicken tonight but a thunderstorm meant a change in plans. Instead, we also had Marry Me Chicken tonight. I’ve made it once before. Tonight I deglazed the pan with a little white wine before adding the chicken broth and also added fresh spinach. We are watching our carbs and had pasta last night, so we didn’t serve over pasta as recommended. I made roasted asparagus with it.
My husband made chicken noodle soup from scratch. He makes his own broth, which makes a huge difference. This is the recipe.
Grilled beef kabobs and sliced zucchini were our dinner tonight. When it hits 75 degrees on an April day in our neck of the woods, comfort food is grilled food. I’m sure I will be making some soup this weekend though… we are supposed to get a dusting of snow!
Soup here tomorrow. Need to use that ham bone…so split pea it will be!
93 degrees this afternoon. We went out to our favorite Mexican place and enjoyed Margaritas on their patio. So, didn’t cook today.
It’s 95 degrees in the shade here, comfort food is pizza from my favorite local place, they are the best, and ice cream. Not a day I want to cook and do anything.

This is normal for AZ at this time of year and does not feel hot as we still have a 30-degree temp spread every day. It will be back in the 70’s/80’s next week. I know it’s hard to fathom if you’ve never experienced desert weather, but it doesn’t start to feel really warm here until the temp gets to 100 and monsoon season (mid summer) adds humidity. Until then, 90+ temps are quite comfortable–and I detest heat, have never acclimated. We won’t leave for Maine until June when the real heat starts to approach.
