Whatcha Cooking? - Comfort Food Edition

It was 86 degrees here today near the coast in San Diego. D1’s childhood friend is opening a small zero waste grocery store and last night was an event there for those close to her. There is an empanada place next door to her store so we grabbed a couple to take home for a quick dinner afterwards.

I love the idea of a zero waste grocery store. I feel like we as a society started taking the baby steps toward eliminating packaging, then Covid hit and it was just an explosion of disposables. Delivery in boxes. Grocery bags because of pick-up services (like at Walmart). Since I better say something about comfort food…I’m a cheese and ice cream lover but lately my kid hasn’t been feeling so great after meals and we’re wondering about adult-onset lactose intolerance. Anyone have experience…and do you do the lactaid pill thing? TIA

Has your kid recently been ill? I find I cannot tolerate dairy for a while after illness, but after a few weeks my gut bacteria seems to rebalance and I can. I have used the pills with mixed success, and find it easier to just avoid all dairy for a bit, then slowly reintroduce starting with greek yogurt and hard cheeses (lower lactose content).

Made yemista today (Greek stuffed peppers). It’s one of my favorite things to order when we go out for Greek. It was the perfect thing to make today (chilly overcast day) because it took hours (nearly 4) to cook. Could never make it during the workweek. I made a double batch so we will have it again for an easy dinner during the week.

I followed an online recipe and it was good, but not as fabulous as I had hoped. Not as good as that at any of the many Greek places I have ordered it. I can’t really put my finger on what was lacking.

I love this dish so much I’m willing to try again. Anyone have a great recipe for this?

A loaf of banana bread and 2 trays of oatmeal raisin walnut cookies. They were very good with a cup of milk. The house just smells wonderful, that’s also a part of comfort food.

Stuffed shells tonight, biscuits, salad with horseradish vinaigrette. And luckily leftovers for tomorrow!

DH is in the mood for something a bit fancy so we’re having grilled Chilean sea bass (marinated in bourbon and maple syrup) with grilled romaine salad.

Wife and daughter are on the road for accepted students day. Tonight they are celebrating and having dinner at the Four Seasons Baltimore Inner Harbor. Me? Dinner tonight is Cheerios!!

Made this copycat Chipotle chicken yesterday…. Omigosh, it was so good! Used boneless breasts since H doesn’t like thighs. Served it in little tortillas with taco fixings and some lime crema. Yum!

I will have to try this! I always do my bacon in the oven - no more stove top splatters!!!

My H has always cooked bacon in the oven- he likes thick cut. I’m happy not to have grease all over the place:)

But the post @BunsenBurner posted has an oven twist to it! I’m going to try it!

We have an air fryer. Best bacon I’ve ever made. Easy clean up and no spatter.

@CMCMLM Thank You for the Pollo a la Brasa recipe! H raved (and inhaled) it…asked it be put on the weekly rotation. The sauce is killer, too. I love it also because all the ingredients are always on hand at this ranch!

Spiral sliced ham, scalloped potatoes, asparagus, pineapple bake, deviled eggs, scallions and gherkins and pepperocini . Lots of leftovers! Hope everyone has had a nice holiday weekend!
