Whatcha Cooking? - Comfort Food Edition

Roasted rack of lamb, also slathered with lots of garlic, olive oil, and rosemary. Served with roasted potatoes and al dente asparagus. Ice cream and fresh strawberries for dessert, followed with a cup of tea and oatmeal cookie.

Snowing today :frowning: in NW Ohio so leaning into my favorite comfort food, spaghetti and meatballs (or meat sauce - haven’t decided yet).

I haven’t been to IKEA for so long! My kids used to love when we would have lunch there…

Tonight I did a slow cooker in the instant pot comfort meal.

Spray or oil the inner lining pot. Take a package I’d dry stuffing mix and dump in pot. Top with a good handful of fresh green beans. I also added a can of drained mushrooms. Top with some raw chicken pieces - I used breast tenderloins. Take a can Of mushroom soup, thin with some broth and pour over everything. I used vegetable broth cause I had it in the refrigerator. Salt and pepper and oregano. Cook slow for about 6 hours. Take too off and pull the chicken apart and lightly toss everything disturbing the layers. Cook slow for another hour or two.

We’re getting ready to head for Maine for the summer, so we’ve been cleaning out the pantry and fridge and eating down our stores.

I made a final loaf of sourdough, then dried my starters so I can take one with us:



Tonight I made a crustless quiche from leftovers:

Finally, I harvested the rest of our lemons to freeze the juice and zest and made one last lemon tart to share with some neighbors:

Meals will be slim pickings the next couple of weeks.

Tonight, ShawWife is making salmon and asparagus en papillote plus Caesar’s salad. Previous meal: Haddock or halibut with chimichurri sauce. Very good smoked spicy Feta dish from Ottolenghi. Best dish of the year was salmon cooked as taught by Thomas Keller of French Laundry.

Great winter comfort food was an instapot recipe for a Korean stew with chicken thighs, potatoes, carrots (?) and gochujang. Another great recipe was Szechuan eggplant (this was my dish).

I am doing skirt steak with chimichurri. I usually do everything homemade, but I saw Trader Joe’s had the chimichurri sauce so I thought I’d try that. Also bought their new zhouk sauce as well.

I am using Alton Brown’s skirt steak marinade but did not use soy sauce (not a fan for marinating meats). I added just a tad Worcestershire instead and added some salt. Will have with the chimichurri. I bought 4 lbs of skirt steak because my Whole Foods had it on sale for $9.99 (usually $16).

We are dining out Monday - Wednesday as we prep our home for sale (interior photography). On May 5 I will charcoal grill some Snake River Farms Wagyu skirt steak for fajitas. Will grill some onions and bell peppers, and make a pico de gallo. To add to the celebration I will make some flour tortillas from scratch and margaritas on the rocks also from scratch.

In big cooking news, I am getting ready for our daughters upcoming HS graduation week. So, massive cooking that entire week (save two restaurant nights). It’s looking like 5 brunches and three dinners. Details will follow… :grinning:

In mid-June we are flying out to Palo Alto for our son’s belated 2020 Commencement ceremony. We’ll hit some of our favorite spots in the Bay Area, but I do have reservations at our favorite 3 Michelin Star restaurant. Can’t wait for the wine pairings.

Happy Cinco de Mayo! Any delicious, “five star” home cooking meal to celebrate this holiday?

We had big taco salads a couple of nights ago - guess I didn’t do good planning to have that tonight instead!

I actually saw this “recipe” - not much to cook! And I thought it actually sounded like a simple way to celebrate - dice up your own pico and have a side of simple nachos!

FOR THE PICO DE GALLO:

  • 2 ripe but firm tomatoes (1 pound), cored, seeded and diced (2 cups)
  • ½ small white onion (4 ounces), finely diced (1 cup)
  • 2 jalapeños (3 ounces), stemmed, seeded (if desired) and finely chopped (1/3 cup)
  • ½ cup cilantro leaves and tender stems, finely chopped
  • 1 teaspoon fresh lime juice, plus more to taste
  • Kosher salt

We had black bean and sweet potato tacos last night in celebration of…Wednesday ? Whoops. Should have paid attention to the calendar.

It’s a beautiful day here (there haven’t been too many so far this spring) so I’m thinking it is a good day to grill. Not sure what just yet.

It’s Cinco De Mayo every day in AZ far as food goes, but we’ll be having taco salad, pico, guac, chips and salsa, and Margaritas just because it’s a favorite in our rotation. Ole! :taco: :mexico:

The wife and Thing #2 are meeting friends at a horse show this weekend so I made them a huge pot of chili, two pans of cornbread, and I smoked three full slabs of salmon.

Husband was gone all week on business but I had tacos and refried beans waiting for him when he got home today . A day later than the holiday but he was surprised!

Last night I did a very easy, quick Turkey Rueben a la the tortilla crunch wrap trend.

You take a flour tortilla and slit it half way up (I’ll try and find a video). Starting at the left, in each quarter of the tortilla add a different ingredient. I did turkey-thousand island, swiss cheese, sauerkraut. Starting on the left, fold each quarter over each other so you end up with a triangular shape. Fry like a grilled cheese in a pan - I used olive oil and cover during frying to avoid spatter and to melt the cheese. Delicious!!

Here’s a taco one as an example!

I made a frittata last night with mushrooms, scallions, cheese. I have always cooked the vegetables, then added the eggs primarily on top of the stove, sometimes finished the frittata in the broiler. This time, I found a recipe for baking at 400 degrees. No need to cook anything in advance. Just throw everything together in a casserole and bake. Tasted just as good, and definitely easier!
