Fajitas were a good idea too. But two of the packs were fajita (1 beef for dinner tomorrow, one chicken for the freeze).

Yum! Makes me want to run out to buy chicken breasts. Have the rest of the ingredients on hand, believe it or not!
One way I might use them is to dip in beaten egg and panko and air fryer them. I did something similar last night. Cooked them in air fryer after spritzing with a bit of avocado oil spray. When done put them on a sheet pan and topped them with a bit of leftover pasta sauce and some leftover grated cheese from when we made pizza last week.I put it in the oven for a few minutes to melt the cheese. I probably could have put it back in the air fryer but the oven was already hot.
Another way I use skinny chicken breast is to marinate in a mix of olive oil/ lemon and shawarma type seasonings. Bake on a sheet pan with red onions and red bell peppers. Chopped it up and Served it with a white yogurt sauce and a green salad.
I probably could have used the pre-seasoned thin boneless chicken breast for chicken cutlets (where I usually season the breadcrumbs). But loved having the new ideas here.
@abasket - I did your sheetpan dinner idea that I labelled “winner, winner - chicken dinner” (literally). It was excellent. At first I thought not many veggies around. But I had half an onion, some older celery, baby carrots (cut some of them in half but probably didn’t have to since ended up cooking a long time. Part way through the cooking I realized I had some cherry tomatoes to throw on. Near the end I added some parm I was trying to use up.
I love a sheet pan dinner. Also excellent with Italian sausage.

Been slow roasting a bottom round roast all day and simmering a homemade onion stock. French dip sandwiches for dinner tonight
It’s been raining here all day today too. Rained most of the day on Friday too so I made a pot of chili. Today, we’re having weisswurst, and either red cabbage or a German cucumber salad, sourdough bread and butter. Maybe also some corn on the cob I need to use up.

I don’t have a mandoline. I just slice the cucumbers very thin. I have used both English cucumbers and regular cucumbers, depending on what I have on hand. But, English are probably best, especially if you want to leave any of the green part on.
Rainy, cool day. Hubby has made a New England boiled dinner with the left over Easter ham and bone. Yum.
Funny - torrential rainstorm here and I couldn’t bring myself to go to the grocery store even though we were low on everything. I made split pea soup from things I had in the pantry and my leftover Easter hambone! Made croutons from some old brioche hot dog buns we had in the bread drawer. My family actually loves pea soup and we all joked that we felt like Victorian orphans eating pease porridge. Please sir, may I have some more…
It hit 100 today for the first time this year:
DH is in LA visiting his folks, and I went out to lunch with my dad and don’t feel like eating dinner but may make some gazpacho to have tomorrow. We’re leaving for Maine on the 12th, so it’s time to start making meals from whatever’s in the fridge. No new groceries unless unable to complete a recipe with what’s on hand.
We had lovely weather today. Hope it drifts eastward.
I gardened a lot in the afternoon. Continuing on tip from @abasket to explore sheet pan cooking, I popped dinner in the oven and then had husband keep an eye on it while I pulled dandelions. The main sheetpan ingredients were sliced chicken/spinach sausage (from Sprouts - quite good) and eggplant. It also included chunked sweet potato,onion, red pepper, green pepper and carrots and celery. Tossed with olive oil and italian spices.

Also good with shrimp though they can be added near the end since they don’t take long to cook! Chunks of potato, for on the cob in small chunks, green beans and then shrimp the last few minutes is like a shrimp boil!
I made something tonight for the first time that showed up in my Facebook feed last week. No Peek Beef Tips. Had it over wide egg noodles and finally made the German cucumber salad. Husband really liked it and so did I!

There are other recipes out there for it. I used Lipton beefy onion soup mix because that’s what I had already in the pantry and another recipe suggested the beefy version. Seared the meat before putting in the baking dish. Used water option, not ginger ale . Used a can of Campbell’s cream of shitake and cremini soup because the store was out of regular cream of mushroom soup. It was tasty .
