Correct @CottonTales . Thanks. I fixed it right away (within 2 or 3 minutes) but you had already posted.

With the German Cucumber salad- I added some onion (which some recipes add) and used dried dill instead of fresh since I had dried dill on hand. Used about 1/3 the amount of fresh dill.

If you have leftovers from a sheet-pan dinner, you can wrap in a tortilla for an interesting burrito.

In a lunch bowl variation today, I tore up the tortilla and cracked and egg over the top. Then sprinkled on some shredded cheddar. Microwaved it 30sec / check / repeat. (Note - if you add an egg, there is risk of explode/splatter… you may want to cover it.)

Thanks everyone for bringing German cucumber salad type dishes to my attention; had to use up some radishes and cucumbers yesterday - I sliced thin and dressed with nondairy sour cream, fresh dill, lemon zest, lemon juice, salt and pepper. Tasted even better today. The radishes were the TJ organic multicolored…I found them to be milder than just red radishes from regular grocery store.

Cleaning out the fridge soup today. It’s kind of a mishmash Of ingredients. Moroccan-spiced chickpea, tomato and kale stew, with a splash of lemon juice and a handful of ditalini thrown in to thicken it. :woman_shrugging:t3:

Alright…where is that German cucumber salad! I picked some radishes tonight and will have more later this week!

I’m guessing Sevmom’s link above will be more polished than the dupe i wrote out in my post…then again, radishes with just sour cream or butter, dipped in salt and pepper, are already so good!

Half a chicken in the pot, carrots, potatoes, carrots, S & P, a bit of thyme, bay leaves. Bake. Yum. Comfort food.

Dinner was quite an improv. Pulled pork, onion, garlic, carrots, shredded cabbage, a splash of tomato sauce, a splash of apple cider vinegar, salt, pepper, Italian seasoning. Cooked to perfection… Mr. B licked the plate clean.

Well I made the german cucumber salad last night only to realize that my Moroccan mother made similar all the time! :slight_smile: I did do more than cucumbers, onion, sour cream and dill - I added some sliced radish, buttery green olives, halved grape tomatoes and a dash of vinegar, sugar and salt/pepper. Having the leftovers for lunch and it’s good!

Sounds good. The recipe I posted above also has vinegar,sugar, salt, and pepper in it. I also add some onions to the recipe.

that sounds really delicious (I think you had me at buttery green olives)…

My latest cooking obsession is seared ahi. It seems to be the one fish that everyone in my house will happily eat and it couldn’t be easier.

I drizzle some soy sauce, coat it in a mixture of black and white sesame seeds and sear on a super hot cast iron skillet for 45-60 seconds per side. Refrigerate for an hour, slice and serve. I serve it with warm rice (drizzled with a touch of rice wine vinegar) a bit of ponzu sauce for dipping, and whatever else sounds good (sliced avocado, steamed edamame or seaweed salad). It is also really good on a bed of greens with an asian sesame salad dressing.

It seems like lots of people are using green olives right now.

I made a yummy jasmine rice with marinated green olives, lots of black garlic, dates, chopped tomato and onion, roasted red bell peppers, onion seasoning, apple cider vinegar, smoked onion mustard, chicken bouillon, and msg butter.

I added black beans for protein and it was a great mix of flavors! :drooling_face:

My husband does not like olives. BUT when he was in Spain for business he did enjoy the fresh olives there.

Similar in France. The olives were both flavorful and smooth and buttery!

It’s cold and rainy here in SC; D20 and I just got home from seeing Jagged Little Pill, and I didn’t feel like cooking a big meal. Sooo it’s an ultimate Southeastern PA comfort food kinda night, chicken corn soup and grilled cheese :drooling_face:

I bought these two seasoned chicken quarters for $5 (part of the Safeway 4 for $19.9 deal) thinking we might try something with the new cast iron skillet mentioned in cast iron thread. My husband decided to do it on the grill instead.

We added some smallish potatoes (microwaved 5 min for a bit of pre-cook) at the grill. Added a salad and it was a great meal. Extra bonus - enough leftovers for another meal for two.
