Whatcha Cooking? - Comfort Food Edition

I may have plugged this comfort food recipe before, but am going to do it again cause it’s SO darn good! Also a good comfort food for warm weather as it’s an instant pot recipe so besides some browning/saute, it’s no heat your kitchen.

You can use pork chops or chicken. I did chicken breasts last night and they are fall apart tender. The sauce is YUM. Serve as is, over noodles, mashed potatoes, rice or as my H likes to do it, over a toasted piece of bread!

Made a veggie (artichokes, asparagus, mushrooms, crab, green pepper) cauliflower-crust quiche tonight.

Yum - did you use a recipe or just throw stuff together?
It sounds really good.

I have a recipe for the crust but, for me, quiches are a way to clean out the fridge. I use whatever’s on hand.

D18 made a lasagna last night with ground turkey, ricotta cheese, some veges, but she used Chickapea noodles, which are made with chickpeas and lentils, I believe. I thought it was very good, though “you” quickly figure out that the noodle is not a real pasta noodle. :slight_smile:

I’ve been on a seared ahi kick lately. dredge it in black and white sesame seeds, sear each side 60-90 seconds on a scorching hot cast iron pan, then refrigerate it until dinner. Slice just before serving. Here I plated it layered with avocado slices and topped with a ponzu-like sauce my H concocted (soy, sugar, lemon juice reduced until thick). Served with a scoop of rice drizzled with a bit of rice wine vinegar and a side of sesame and chili cucumber salad. So yummy!

Ironically I had planned seared tuna for dinner but must admit I never thought to chill it afterwards! Since it’s pretty dang hot here I’m going to try it. I’m making the cukes too. Thank you!

I don’t think our cats would eat it, but my whole family loves zucchini. It’s especially good if you brown it a little when you cook it. I just do it on the stove, but here’s an oven roasted recipe that has the right look: Oven Roasted Zucchini with Brown Butter Gotta have those little brown spots on it and you get this incredible depth of flavor. Zucchini is definitely one of my fave summer veggies. I always have some in the fridge.

Speaking of cats, my husband dropped a piece of a grilled zucchini on the floor, and
Our tortie mopped it up. We were terrified! What if zucchini is bad for cats?! Nope. Google said it was safe and quite healthy! So our cats get a piece every time we eat grilled zucchini :slight_smile:

Love, love, love baked potatoes smothered in almost anything, though I consider them more a treat these days than the staple they used to be.

For lunch today, I made a Mediterranean salad with roasted shrimp using the It’s Skinny pasta “rice” I posted about in the HealthyHabits thread:

DH can’t have shrimp or onions, but he’s out running errands and won’t be home 'til dinner, so this is an indulgence for me.

Love me some baked potato! Some of those look really good, will be adding to my list of things to try. Currently, one of my favorite toppings that turn a baked potato into a meal is to top it with chickpeas that have simmered in Frank’s hot sauce and a bit of butter and some crumbled bleu cheese.

WOW, I WANT that!!! Might make it this weekend when D1’s vegetarian fiancé is here!
