I’m not a big cook but on the Romanian side of my family, my grandma cooked lots of soups, sarmale, etc. from Eastern Europe. The only brand of store-bought soup she liked was Tabachnick. My local grocery store carries it (very affordable) and I’ve stocked up. Short-cut to comfort food. :slight_smile:

I made the beef stew above on Saturday, but didn’t get a picture. I followed the recipe except I added fresh peas and mushrooms since I had them on hand. I served it with a crusty french bread and both H and I thought it was delicious.

The minestrone soup looks amazing. I think I will make a pot this week.

I save my Parmesan rinds and add them when I make minestrone to flavor the broth.

I added a bit more broth and increased the seasonings somewhat. It was tasty!

One of the well known facts of cooking - overall, people DO NOT season enough! Most people could be much more generous and get better flavor punch with increasing seasoning.

Tried something new tonight: tandoori chicken. Marinated boneless skinless thighs in a mixture of tandoori paste and yogurt overnight. Roasted 25 minutes at 375, then brushed with melted ghee and broiled for 5-10 minutes more. Served with lemon wedges, cucumber raita and naan. So yummy!

Another comfort food meal tonight for us - pasta with a sausage and pumpkin sauce. It’s a family favorite we’ve been making for years. It calls for pairing with a spinach salad but DH went to grocery store to get a couple things and the produce section was essentially cleared out. :disappointed:

Agreed. The beef stew I made said to season generously with salt and pepper, and I did. :slight_smile:

I got it in the Indian section of our local grocery store (wegmans). I just googled the brand (laxmi) and it looks like they also carry it at Walmart.

Tonight, I am roasting a Kosher chicken, and s I can’t be bothered to do anything else, I have made a savoury bread pudding. I cubed some leftover foccacia (made in on Saturday) and have mixed it with mushrooms, celery, onions, grated cheese, parsley, a fresh corn that was hanging out at the bottom of the fridge, and moistened it all with beaten eggs and chicken broth - we’ll see what its like.

I also made the best chocolate cake on earth - Beatty’s Chocolate Cake from Ina Garten - yum!

I’m so boring, made a sun dried tomato pasta and again baked chicken.

Tomorrow I’m making beef stew.

My Paula Deen Crock Pot Mac and cheese was easy….and delicious! If you do this…just use 1/2 and 1/2 instead of milk. Yum!

You guys are making me hungry; I know you’ll be jealous, but I’m having tater tots and chicken nuggets for dinner. I’d made beef/veg soup chicken soup, pot roast, and roasted chicken recently, but after 2 weeks of covid and now secondary bacterial infections, I need a break from cooking. So much for being a hermit; livin’ the dream :joy:

I love tater tots. And they were perfectly done in my new air fryer!
