Whatcha Cooking? - Comfort Food Edition

Left over beef stew and crusty french bread tonight. Tomorrow night I’ll do a chicken and vegetable curry since we haven’t had one for awhile.

Mexican shrimp soup (the spicy tomato broth kind). I can never get it to taste like the restaurant though.

When the time is right for tater tot’s, it’s a good night! A fav dinner if I’m alone - loaded tater tots!

I also made homemade chicken soup today. I will make Bombay Chicken Salad with the chicken. Yum!

For fast comfort food, I really like pre-seasoned lemon chicken pieces from Costco. I emptied one packet into a Pyrex dish, added some baby potatoes and some carrot chunks and baked this for lunch - quick and yummy.

As a Southerner, I’m used to casseroles with a topping (crushed Ritz, panko, etc) and I miss that when I’m doing keto/low carb. I recently read a tip about using crushed pork rinds so tried that and it was great. Very similar to panko. That really makes a low carb casserole comfort food!

I’m okay without a topping, but that’s a good idea for those looking for it.

Tonight, I am using the leftover chicken from last night and making Ina Garten’s Chicken stew
This is a very yummy way to use leftover chicken. As I have precooked rice from a few nights ago, I’ll replace the biscuits with rice.

Comfort food of course doesn’t always fit the healthy food description!

I bought some center cut pork chops last weekend, nice and lean. For a quick mid week meal last night I did pork chops and stovetop stuffing. BUT I dressed it up and added more vegetables. I browned the pork chops in some olive oil and ghee. Put the dry Stove Top stuffing in a 9 x13. Added a cup of chopped celery, 1/2 cup shredded carrot and about a cup of sliced mushrooms I sauteed when doing the pork chops. Used chicken broth for the water for the stuffing and laid the pork chops on top of the stuffing/ 9x13 and baked it all for about 45 minutes at 375. Warm, filling, but chock full of vegetables too! And then a side of halved mini tomatoes with salt and pepper - refreshing!

@abasket Agreed! It’s sometimes a challenge making comfort foods healthy (at least what works as comfort food for me). But it’s a fun challenge trying. :grin: I’ve never been a fan of pork rinds, but now that I know they can work as a low carb substitute for panko I’ll be using that a lot.

Thanks to the multiple posts about sauerkraut, I made polish sausage, sauerkraut and a salad last night. It was a wonderful cold weather meal and definitely qualified as comfort food for me. And leftovers for today! :grin:

Mine too! I don’t use the chicken breasts the recipe calls for, I use either leftovers (which is chop and stir into the sauce), or buy pre-cooked chicken breast chunks at TJ

Someone posted this on a Slovak recipe group I’m in; I think I’m going to try it this weekend (if I can find chicken!!). It reminds me of my Baba’s paprikash, so total comfort food. Thinking about making some halušky to go with it, definitely not healthy :joy:

A couple of nights ago, I made barbecue chicken stuffed baked potatoes. I bought a rotisserie chicken and removed the meat and mixed in a smoky barbecue sauce. Stuffed the baked potatoes with that and topped with the typical things on a barbecue chicken pizza - a mix of shredded smoked Gouda and mozzarella, red onion, cilantro, with a bit more barbecue sauce on top. Dh LOVED it!! Added some deli Cole slaw as a side.

Certainly not fancy but definitely easy and comforting :slight_smile:

I made Brie bites, half with hot pepper bacon jelly and half with carmelized onion and fig jam, to enjoy with our Manhattans tonight (Bourbon is comfort food, right?).

Then, we made fresh naan to enjoy with yesterday’s leftover dahl and rice:
