Where should I aim?

I’m currently an undergrad engineering student (Materials Science and Engineering) at the University of Illinois at Urbana-Champaign and am thinking about law school (Intellectual Property, specifically. With about a 3.0 GPA, and a 168 LSAT, is it even worth thinking about schools like Georgetown or George Washington? What schools should I be looking at realistically? I’m sort of a newbie with law schools.
Do schools have any leeway about a lower GPA because I’m an engineering student?

A little, yes.

My suggestion is to take a gap year and work. That will enable you to max out your GPA with senior grades-- hopefully, lotsa A’s. Also, retake the LSAT when you have more time to study.

LS admissions is nearly all about two numbers: GPA+LSAT. Since you can’t increase the former very much at this point, try to score a couple of more points on the latter. 169, for example, puts you at Georgetown’s median, a 170 puts you over the meida (~75th) and that will make you more attractive to them. Their rankings are based on median scores, so it is to your advantage to get above the median if you can.

IMO, GW is only worth attending if they offer you some big bucks in merit aid.
