Here are my scores: Math 2-740, U.S. History-780, Bio M.-650; SAT: 2090 CR-730, Math-640, W-720/10; ACT-33. I'm applying to UC's, USC, Cornell, Stanford. I wanted to know if I can use score choice to not send my Bio M. score to these schools. Also, if I send the ACT with the subject tests, does that mean I also have to send the SAT 1 score if the school does not allow score choice? In other words, can I send just the ACT with Math 2 and U.S. History if the school does not allow score choice.

Schools that do not accept score choice will want to see all scores. However, i’m not so sure that they could ever know you took the Bio test and got a 650, unless it is on your transcript. You probably could do what you are proposing, but beware that a school could take severe punitive action against you if it ever found out that you did not send all scores.

If you took multiple subject tests on the same day, you can send in all of those scores or none, no in between

If I want to send subject tests, do I have to send the SAT 1 as well? And Bio was on a different date from math and history.

No. You can choose to send just ACT and SAT II’s to schools that do score choice. Most of these will not require any SAT II’s if you are submitting ACT but of course it’s smart to send all high scores. Your ACT s definitely more impressive than SAT I and don’t send that Bio if you don’t have to!
