If I want to go into the medical field, should I take subject tests valuable and pertinent to what I want to be, like: Chemistry, Biology E/M, Math II, Physics

Or... do subject tests have nothing to do with what you're interested in becoming in the future? Do colleges just want to see that you are well-rounded? In that case, would it be better to take a History, Math, and Science?

Take whatever you will score best at. Make sure you take a math and a science, with a third one in whatever subject you excel at. Colleges don’t mind what you aspire to become, just the numbers.

I’d say you should take Bio and then whatever else you want to take (though if you’re going to take 3 or more, take a Math one).

Take a math, science and a humanities so that you’re set for whatever SAT Subject Test requirements colleges may ask for.

Are you all sure that I should just take whatever I’m good at? I feel like I can take on Chemistry, Math II, and Physics, but it sounds like I’m not a “well-rounded” student since it’s all math and science stuff… or are Chemistry and Physics two different worlds? I like physics, but it doesn’t seem very pertinent…

immortalix, by humanities, do you mean something like US History? If I wanted to be a doctor when I grow up (it feels like I’ve heard this phrase one too many times), would it be weird if I took US History?..

I have heard some people say to take as many as you think you can handle.
You could probably take Chem, math, physics and add a history/language/literature test.

I’m not very experienced at this yet either, and I’m in the same situation as you.
I’m planning to take chemistry, math II and a language with listening (I’m native).
I might take US history since I’ll be taking APUS as a junior next year :D

This site will help you figure out the number of subject tests you will need to get in.
Pretty much though, I believe the colleges only care about the score you get. :]
