Why are some professors so bad?

This title is basically happening right now in my microecon class. I have a really really bad 75+? (assuming 75+ because she was 17 when kraft macaroni was put on Australian shelves) professor.

Basically #1. She uses her own definitions that aren't in the book, and they aren't standard definitions on the Internet. She also expects definitions on tests in our own words based off of her words.
#2. She does not have flexible office hours, making it extremely hard to get to her office for help. The tutors in the business department haven't learned Microecon the same way as it is being taught, so they are somewhat useless. We have to apply things as we learn them. Using her methods.
#3. Her rate my professor score is incredibly low... I checked that after I was in the class for 2 weeks.
#4. We use gmail and springboard for homework, and she doesn't know how to add students into her springboard class. She also doesn't know how to attach homework files, .doc, .pdf, into gmail. She'll assign the homework on a Monday, and not know how to send it on gmail, so she would give it to us on Wednesday, which would be due on Friday. We showed her how to do both, but we are not experts, so she does not trust us.
#5. The book is somewhat useless as it is not 100% of what she is talking about.
#6. She likes to teach in stories rather than use the chalkboard that we have, and I find it extremely difficult to learn under this setting. She also claims that she won't change her teaching method for a single student.
#7. All homework is busywork. My last homework assignment used 16 pieces of loose leaf paper for graphs, and 5 pages of computer paper for paragraphs and definitions. I also got a 50% on it mainly because of grammar, and I recently found out that homework assignments can only reach a maximum of 20 pages. Everything on the last page was marked off... We cannot use graph paper.. This is my busiest class.......

The only good things are

1. She's really nice, but not nice enough.

2. She will the answer her phone at any time. She probably does not sleep.
