Leave it to me to start an egg thread. Guess I’m putting all my eggs in abasket… (boo!! Bad joke!!)

All the discussion on the “upper middle class” thread about eggs. A generally affordable source of protein that can turn breakfast, lunch, dinner or snack into a tasty edible. So generally accessible to all (minus those who have allergy, are vegan, and/or other circumstances)

Share your favorite dish(es) where eggs are the star. So an egg in a chocolate chip cookie recipe does not count. Scrambled, in a quiche, souffle, fried egg sandwich, hard boiled with a sprinkle of salt…the list can go on and on.

We regularly eat egg sandwiches for breakfast - whole grain English muffin, organic eggs from farmer’s market, a sliced up chicken breakfast sausage, 1/2 a slice of pepper jack cheese, and fresh sage.

I’m eating egg drop soup made from a powdered soup mix for lunch. Not exactly scratch cooking … but so good when you’re feeling under the weather. I add two eggs and a dash of sesame oil.

I also like to make an egg sandwich for breakfast. For bread I use the Dave’s thin sliced 21 grain bread. I like my egg over easy with a bit of sharp cheddar cheese and I also add a round chicken breakfast sausage, avocado and slice red onions. I like to eat my breakfast sandwich with hot sauce or tabasco.

Egg “salad”: mix 1:1 (by volume) shredded HB eggs and shredded cheese (TJ’s Quattro works great), add some (lots in my case!) finely minced garlic, salt and white pepper to taste, and just enough mayo to make a paste-like mix. Serve as an appetizer with some crackers or bread!

I make a curried egg salad for lunch or an appetizer. I use eggs, finely chopped onions and celery, salt, pepper, mayo and curry powder. Serve for lunch on toasted bread with some micro greens or on a good cracker for an appetizer.

One of my favorite go-to breakfast recipes:

Spinach and Gruyère Frittata

  • 8 eggs
  • 1c spinach
  • 1c shredded gruyère
  • 1/2c milk
  • minced onions, salt, pepper TT
  • Cook 5-8 minutes over medium-high heat; transfer to pre-heated 350° degree oven and bake 15-18 minutes until firm

I rarely eat eggs for other meals because I have them almost every day for breakfast, but I was listening to the Splendid Table pod cast and thought this sounded great. (Especially since I adore deviled eggs.) Eggs Jeannette | The Splendid Table

This was my go to playgroup quiche (kids got hot dogs and Mac and cheese, subbed spinach for the arugula and no vinegar, now I make it as a frittata since one of my kids is celiac) Arugula and Bacon Quiche Recipe | Epicurious I make hard boiled eggs all of the time to have on hand, my daughter just made some deviled eggs before heading to the airport. Breakfast sandwich here is Taylor ham egg and cheese (American), on a bagel for the boys, k like a light English muffin or Dave’s bread. When some are home from college I keep sliced mushrooms and baby spinach around for omelets. At one point I was buying 24 eggs a week.

We do a lot of the above. My favorite summer weekend breakfast tradition: whatever great bread product we have for the “sandwich” part and then easy over egg (I want the yolk to NOT be cooked), brown sugar bacon, fresh tomato, kale, cheddar cheese and bread product lightly slathered with a tad of butter, mayo and hot sauce. Sometimes I’ll add avocado if I have it. Or onion. It’s a beauty. :slight_smile:

Here’s a decently healthy egg recipe. It’s true (and delicious) that many egg recipes also call for lots of cheese - so sometimes it’s nice to have something with more healthy substance (frittata). Here’s a favorite:

That’s one of my very favorite egg dishes! I have never seen it in print before. Years ago I had this dish at a school function, loved it, and was given a handwritten recipe with the title Janey’s Chili Eggs. This is exactly the same recipe.

We have it every Christmas morning. Here’s how you can make it ahead - I mix up all the ingredients, except the baking powder, in a bowl and refrigerate. The next morning I stir in the baking powder and transfer to baking dish and bake. This keeps the baking powder from activating too early.

And don’t forget the Jalapeños, which are rich in vitamins A and C and potassium, carotene, and folate, vitamin K, and B vitamins.

I’ve mentioned this before, but literally every morning, I have a 3-egg white scramble with ground chicken or turkey, spinach, broccoli, squash, zucchini, onions and mushrooms or sometimes I’ll get those raw Asian vege mixes from the market. I’ll top and mix it with either a Mexican, Asian, Greek/Med, or Italian sauce of some kind to change the flavor.

And often at dinner, I’ll top it with an egg or two over easy or sunny side up. I go through about 2-3 dozen eggs/week. Alternatively, we have one of those hard/soft boil egg cookers and I’ll take a couple with me for lunch.

“Bread” is considered a BIG treat for me, so infrequently I’ll use tortillas or Dave’s Killer Bread (thin sliced) with my moring/brunch meal.

I used to love when my mom would make hard boiled eggs and add tuna and avocado to top them off.

I tried doing that after the movie, when I was young, and it didn’t take long for me to give up on it.

Fried egg sandwich is my favorite sandwich. Fry the eggs in olive oil and season with salt and oregano. Sandwich between lightly toasted sourdough bread. Heaven on a plate!

DH and I like breakfast tacos for an easy lunch or dinner. Flour tortilla (El Milagro are inexpensive and freeze well so we always have some on hand), scrambled eggs, cheese (cheddar and/or pepper jack) and salsa/hot sauce. We usually add crumbled bacon or pork sausage. I feel bad for the excess packaging but we usually have individual guacamole on hand and it goes well.

We also like the occasional over easy egg on a burger.
