You should take as many AP’s as you think you can reasonably handle – but keep in mind that every college treats AP’s differently. Unless you opt for “Advanced Standing” (graduating in 3 years instead of 4), Harvard does not grant credit for AP’s. The exception is foreign language. If you scored a 5 on the French Language AP, you would be exempt from Harvard’s foreign language requirement. (No credit is given at Harvard for scoring a 4.)

When I attended Harvard in the early 1990s, a student scoring well on the College Board SAT Achievement/Subject Tests (now called SAT II Subject tests) was exempted from the foreign language requirement. I scored an “800” on the Latin test and that was apparently good enough. At the time, I think any score above a 700 would have been OK. I’m not sure whether Harvard still has this provision in the place.

In the end, it really didn’t matter because I took a year of Mandarin anyway. I found the language teachers at Harvard to be excellent. I had a blast (but it was a lot of work)!
