I'm currently a Junior and I've never taken any SATIIs before, so I'm a little stressed about them (I'm taking them in June). My classes this year:
AP English
AP Spanish
AP Music Theory
H Physics
AP Calc
AP US

So...
Is the English Lit test hard? I've heard mixed things about that from my senior friends.

Also, does anyone know how the Spanish SATII compares to the AP? And..would I be crazy to take that considering I haven't spoken Spanish all year thanks to my awful teacher?

And I was planning on taking the math IIC but it's been awhile since I've covered that material and I'm worried I won't do well because of that...but I know the curve is ridiculous, so I don't know. Any advice?

SAT IIs are very easy to prepare for.
You simply have to set aside some time and patience to deal with them.

In regard to the Literature exam, have you taken the AP English Literature exam? The SAT II is identical to its Multiple Choice section. The SAT II has a rough curve, and will prove to be difficult if you aren't a well-read person.

If you've done well on the Spanish AP exam, 4/5, you may want to take the SAT II. It has a harsh curve, given the sheer number of natives who choose to take the exam. However, if you've already taken the AP, then you should have had more than adequate preparation for this test. Just don't take the Listening exam.

The Math II exam can be prepared for with your run-of-the-mill prep book. The raw score for an 800 on this exam can drop as low as 43/50.

Regardless of what, or how many, exams you choose to take, you should spend a lot of time preparing for them.
