The admissions websites lists the priority deadline, maybe I'm blind or not observant enough, but I couldn't find an absolute deadline for applying.
I've started to have doubts on the college that I had originally settled on (University of Utah) because of possibly lack of campus life there.
I've been looking around for schools to apply to so that I have other options.
I'm from Nevada planning on majoring in Political Science and History at whatever university I end up attending, so I don't know what that's worth in the application process.

So I would like to ask you all if I should bother applying or not?
Thank you.

Technically, I believe PSU does have rolling admissions, but getting in definitely gets harder the longer you wait to apply. But, if you’re interested, get it done immediately.

They have rolling admissions, and like others have already mentioned, the longer you wait the more difficult it is. If you are in good academic standing and meet all of the criteria there probably is a good chance, there’s even a better chance of getting into one of the branch campuses (you can do the 2+2 program and transfer to University Park after your first 2 years). Or if you really, really want to get in to the main campus, you could take some time off and apply later.
