Admin reqs: central listing; most flexible

Background (Question below):
I've repeatedly been told not to worry too much that my son's teeny tiny school does not offer honors or AP classes, that each student is evaluated in the context of his or her own school. It also has a completely alternative curriculum, hard to compare to standard year by year courses.

I was running some stuff by an old friend who is a super duper college counselor, and mentioned our current list of schools to investigate, and she said, many of those schools, unlike school X, have very specific entrance requirements such as Y years of language, Z years of English, etc.

We knew he could not apply to engineering type schools because they are very specific about the amount and types of sci courses. We are fairly sure that a flexible school will consider that he has had "enough" language arts and social studies, but if a school wants to count years of very specific social studies courses, 1 year each say of World History, American History, US government, or of electives his school does not offer, eg music, we are in trouble. No way could he take an SATII if he has not taken the underlying courses!

Questions:
1. Is there any central listing of schools HS course requirements?
2. Will schools in general waive requirements if the HS does not offer the requirement?
3. What schools do you know, or are known, for being most flexible if the have requirements?
4. What schools are known for not having specific HS subject class requirements?

note: to make this useful for anyone, come up with colleges galore!
to make this useful to ME, we are looking at small, intellectual atmosphere, not preppy, good math or at least really decent math LAC, for a late blooming, serious, anime loving, 3.5, about 215 PSAT (Commendation, not higher than that)

So far liked Goucher, his HS has sent students there.
Visiting Ursinus, called them, FL might be an issue, but they seem pretty holistic.
