if I were to apply as a transfer student to a school I was admitted to as a senior in high school, would admissions look down on my application because I had already been accepted admission and went to another school instead?

No, when it comes time for you to write your transfer essay. Write about what made you change your mind. Keep in mind that colleges only know you as a number even though they will be able to pull up your previous file. You don’t have a personal relationship with anyone in the admissions committee so I don’t see why you would encounter a problem.

if anything, it might help you a little, because the admissions committee did think you would make a good student at their school once before. :)

As long as you very clearly explain what caused this flip-flopping, I don’t think it should be an issue. Admissions officers should understand that people sometimes make mistakes when picking which college to attend out of their list of acceptances.

It’s probably not going to hurt you.
Plus, if you’re a sophomore transfer you’ll most likely get in as long as you have an acceptable first semester college grades.

I know someone who was accepted to Cornell as a senior out of HS, didn’t go,
got a low 3 GPA first semester of college but still successfully transferred to Cornell.
