Okay, so, here's the deal. I want to major in Biology and my apps always ask me for an alternative. And so, I have a few questions...

For one: Does it even matter...does it because biology is usually impacted (especially in UCs...West Coast-er)? (or do I have no clue what I'm talking about).

And then what is a good second choice for someone who wants to follow some Biological/Science-y Major?

I am 1 class away from graduating in biology and could graduate in 2 months. Instead, I’m sticking it out to go for a Chemistry degree. Do you know what majoring in biology actually means and what it means for your future?

Are you referring to undergraduate application?
You can always change major… so the alternative isn’t so important. But if admission to certain majors are independent from the general admission, that is, the department (or the school of science, say) does it own admission, it might have an impact.
