Am I applying to the right colleges?

SAT: 1420
GPA: 4.0 (cumulative- weighted)
EC: track, tennis, 170+ service learning hours (as a church leader/teacher)

I am planning to apply to…
CSUF, CSULB, UCI, UCLA, Azusa, SDSU, SFSU, and Point Loma University
(All for the Nursing Program)

Do I have a good range of Safety, Target, and Reach schools? Also, I wish to stay in California.

I would say all the CSUs are pretty safe for you. With that GPA and SAT score hax for sure. However, Im little concerned about UCs, they are competitive af. UCI little reach/ match while UCLA will be super reach for you. Why not UCSD as your reach and UCDavis as your match?

It says that my UC GPA is a 3.75.

UCLA’s nursing program is extremely competitive. And unfortunately, UCLA does not disclose their school of nursing admitted freshman profile. So it’s hard to say where you stand among freshmen. They do show their transfer admitted profile though.
UC Irvine does show their freshman admitted profile for Sue and Bill Gross School of Nursing. All stats are for Fall 2017

CSUF has a direct admit for freshmen which is very selective. They also have prerequisites applying as a non-nursing major. Complete high school level Chemistry and Biology each with a grade of “B” or higher (if AP then “C” or higher) by end of junior year in high school (11 grade). And the minimum eligibility index is 4500. And the program will wait list all top qualified applicants. Admission will be offered to the top 20-30 from wait list pool. Your eligibility index is 4620 using your 4.0 GPA. Sometimes the UC GPA and Cal state GPA are the same, in that case your EI would be 4420. Double check you are using the right GPA.
There’s not too much data for CSULB. I would imagine it to be selective.
For SDSU nursing, there is data for the Fall 2017

For SFSU, you can not be admitted as a Nursing major. You would have to complete the coursework prerequisites before applying as a Nursing major within the school or transfer. Minimum Grade Point Average
Prerequisite GPA must be 3.0 or higher at the time of School of Nursing supplemental application.
Score 78 or higher on the TEAS (Test of Essential Academic Skills). If you feel that applying as a pre-nursing major is too risky, I suggest applying as a non impacted major and complete the prerequisites of the Nursing Major instead and apply to the school of nursing.
Not much data on PLNU, but it seems that it is one of the more easier schools for nursing to go to. I would consider this a match.
APU has recommendations for high school course work:
English (four years)
Mathematics (including first- and second-year algebra and geometry)
Science (two years, including a laboratory science)
Foreign language (three years)
United States history or government
Strong academic electives
and, Academic capabilities, as well as involvement in church, school, and community activities, are considered in assessing the applicant’s potential for success at the university. The application process is designed as a tool for making these assessments.
According to their 2014 admission statistics, 87 were enrolled (8.3%).
Finally.
UCLA/UCI should be considered reaches as for everybody.
The CSU’s are looking pretty good. I would say matches or high matches for all of them.
APU/Point Loma seems like a guaranteed match.
Have you considered University of San Francisco or Biola University as safety schools?

For SDSU and CSU Fullerton, you want an Eligibility index of 4500+.

Based on your CSU and SAT score, you are at 4420 so both of these schools look like a slight Reach for the direct admit Nursing program.

You however have a good chance of getting into CSU Fullerton under an alternate major and then apply for the Nursing program after you have completed to the Pre-req courses.

I think you will be fine for CSULB and get admitted as a Pre-Nursing major but no guarantee of getting into the Nursing program without completing your Pre-req courses.

SFSU will be a safety but as stated above they not offer a direct admit into the Nursing program either.

UCI/UCLA are High Reach schools.

APU and Point Loma, again not direct admits but you should have no problem with an acceptance.

You might want to add USF (University of San Francisco) which offers a direct admit program.

as others capture above, nursing is crazy competitive in CA. Apply way further down the stack than you think you will need to. Sac, Sonoma and even Channel Island.
