Am I heading in the right direction or should I be more realistic?

Hello! :-)
I just wanted your general opinion on how I can approve the chances of me getting into my dream school, which is University of Florida.

Some background information that can be helpful:
-I am a Junior currently living in NY
-I go to a performing arts school
-My high school was rather selective in the admissions process (we had to audition beforehand)
-I am a visual arts major (All four years include 1 double-period art class and 1 single period art class)
-I am a Hispanic female
-My GPA is a 3.8 but, I'll assume I'll be at a 4.0+ soon.
-I'm hoping to major in biology/criminology
-I will have volunteered over 200 hours at the aquarium by the time I apply
-I have also volunteered for an animal shelter and multiple hours for multiple teachers at school
-I played soccer my freshman year outside of school (I don't know if this counts because it was so early on)
-I am joining the photography club to go along with my photography class
-By next year I'll have 3 APs to work with
-I've taken honors classes (Global honors/English honors/Language Honors)
-I am able to get some recommendations if I need them from my biology/chem/physics teachers or the coordinator of volunteers at the aquarium.

Now this is where it gets difficult:
-I am taking my SATs in November however my grades in SAT prep are looking rather low. (In the 1600-1800 range). I am thinking about taking the ACT as well.

-If I score an 1800, will I have a shot at UF? I know they're very selective, especially since I am an OOS student, but will the fact that I go to a performing arts school in the city and my ECs have any effect on my app?

I'm working very hard to get into UF, so do you guys have any advice on how I should improve?

Would I consider UF to be my reach, match, or safety?

*Also, I read on the admissions page that UF requires 4 years of math. Is this absolute or can I work around it since I will be taking a double-period AP Biology class/AP Language next year (math won't fit in my schedule) and already have Integrated Algebra, Geometry, and Trig/Algebra II under my belt?

U Florida is a match (maybe high match, not sure) at this stage.
