An internship for music?

I've been really into music for as long as I can remember, and one of my life goals is to conduct an orchestra.

I'm not really sure if I want that as my solid career choice though. I'm into the sciences and whatnot, which is an option I might instead pursue.

Would there be any way, that any of you know of, to get an internship of sorts revolving around music? Maybe shadow the local university's symphonic directors or something along those lines?

Would this be benificial and have you ever heard of anyone doing this?

maybe you can volunteer if you have a symphony/opera house in your city? it's not as music-hands-on, but you could be near it and maybe make connections...

^No "prestigious", but we do have a local university with a fairly good marching band (although, honestly marching isn't my thing, but it is music regardless) and a decent symphonic program.
