Any EC suggestions for improving a bio transfer's success would be really appreciated!

Hi guys, I started my 2nd year at my local community college (Irvine Valley College) back on August 18. I'm a biological sciences/pre-med student and I'm currently researching various schools to transfer to within the next 1-2 years (either Fall 2015 or Fall 2016). The thing is, the previous 2 semesters I've been at IVC, I've focused all my efforts on transferring to UCI since it's very close to where I currently live and has a reputable bio department (I'd save A TON on r&b by living at home). I was and currently am following the TAG sequence for the school, but I would like to expand on my college options. My current aspirations include going to medical school (pediatrics/ pediatric oncologist/ or psychiatry) and studying abroad in Australia for at least one semester.

That being said, I'm really not comfortable or confident with my current list of extra-curriculars because I'm pretty much doing nothing besides going to school, studying, going to the gym, tutoring elementary math/science/English every once in a great while, and looking for a part-time job. I was a section editor and business manager for my high school's yearbook for both my junior and senior years. I was also involved with my high school swim team for all 4 years, but since our team was so good, I got stuck on junior varsity every year... half the team was on a club team year-round while the other half (usually the JV half) was not; our team also made it into the top 3 of CIF champs every year while I was swimming. (Great for my team, but kind of sucks for me individually since it doesn't help me stand out, even though I improved throughout each season.) I've had a few part-time jobs during my summer and winter breaks, but not all, and am currently trying to find a job I'll be able to handle throughout the entire semester with my unit-heavy schedule.

I would like to get any suggestions (particularly extra curriculars I should get involved in) for improving my chances of transferring to any of the following schools:
* Cal Poly SLO
* UT Dallas
* University of HI at Manoa
* UCI (obviously)
* UCSD (not too serious about this one, but I want to keep my options open)
* UT at Austin
* UCLA (not really a priority school, but again, keeping my options open)
--- any other school suggestions with great bio or chem departments would also be greatly appreciated! ---

Basically, my college stats:

GPA: 3.87k
Major: Biological Sciences
* 7 years of Girl Scouts from 1st-8th grade
* 7.5 years of soccer from 5 years to 13 years old
* 4 years of JV high school swim
* 2 years of high school yearbook editor/business manager (organizing distribution days and a club "kickoff" food sales day)
* 1/2 year of tutoring elementary students in math/science/English (this Spring last semester)

Since then..... nothing really besides random and temporary jobs for extra money. ANY SUGGESTIONS ARE APPRECIATED! Thanks guys :)
