RPI and RIT might not come to mind immediately, but RPI has some so-so skiing quite nearby, and Gore Mountain, with excellent skiing and snowboarding, is an easy distance for weekend day-trips. There is quite a bit of skiing accessible to Rochester; I knew excellent skiers from that area.
Less than two hours from Gonzaga University and Whitworth University to Schweitzer Mountain Resort in Idaho. Very affordable season passes for college students.

RPI is a very strong engineering school, and while it’s nothing like Alta or Telluride, snow is not too far and they do have a ski/snowboard club: https://www.facebook.com/rpissc/
At MI Tech, the slope is right across the river from campus… And you’re required to take a credit of some physical activity every semester.
Also, don’t throw out U. Of New Mexico. Sandia is accessible by bus and tram from downtown, with Taos a little more than an hour away. It may not be the absolute strongest school, but it isn’t bad, and we used to get interns and co-op students on base. A fair amount of tech going on in town.

@50N40W Good idea. Though Taos at least 2 hours away and more in snowy weather - but an awesome mountain! Skiers only (unless they changed the rules in the last few years). Also Santa Fe is good (better than Sandia) and only an hour away. If you’re willing to make a long drive you can get to snow in Southern Colorado too (Wolf Creek, Durango).
Southern California has two ski resorts about an hour from the metro LA area in Mountain High and Big Bear. Cal Poly Pomona, Harvey Mudd, USC, Cal Tech, UCLA, CSULB, etc. all offer engineering programs.
