I originally signed up for three (APUSH, Psycology, and English). Though I'm having my doubts about US History. Though I hear the teacher's really great, I'm thinking about downgrading to Honors to go into 20th Century History, which I find to be a whole lot more interesting, and would have a lot more to do with what I plan to major in: Urban Studies. I also plan on getting a part-time job, so there's that also. The credit doesn't matter much to me; I'm really looking into open curriculum schools, Brown being my focus.

What do you guys think? Keep or go to Honors?

Those are the exact AP courses I took last year. I hated APUSH. It is irrelevant to what I want to do (MechE), and is generally a ton of work (busy work at that!) filled with boring content. Of course, it might be different at your school, but for most people I know APUSH was that way. Honors won't tarnish your precious transcript, especially if you'll have a job; you don't really want to have to worry about juggling a heavy load filled with courses you're not interested in if you can prevent it. I'd say go with Honors.

Psychology is fun and AP English will really test your limits...in a good way, for the better.

Yeah, my school's is more or less the same. Most people just do it to get the credits so they won't have to take the class in college, which won't matter anyway, since schools like Brown and Amherst you take only the classes you're genuinely interested in.

I might pick up another AP myself, but that's just me. Remember that it is best to take the most challenging courses. However, your decision to drop from APUSH to honors 20th century history is fine. If that's really what you want to take, that's better than taking all APs.

If you can maintain high grades in APUSH, and the other APs, they by all means stay in them. However, if you grades start to slip, or you think they might, I would rethink things. Honors 20th Century History sounds a lot more fun anyways. ;)

If you think you can pass the APUSH Exam with a 4 or 5 by the end of the course, I think you should take it. Remember that this is good to get out of the class in college, which would probably be much harder than APUSH. Then you can focus on Mechanical Engineering.
