AP, does it matter a lot?

Well, I'm a freshman at high school (please don't say "you're too young.") and I am taking some AP courses.
It looks like I'm gonna be taking about 7-8 AP classes by the end of junior year, and i was thinking about self-studying some of the easier AP exams (Psyc, Human Geo, Environmental Sci). I was just thinking, would having like 5's in 11 AP exams help a lot? Like, Harvard might think, "Oh, he did all these easier AP only because of college." and it might hurt my chances. Should I self-study these AP courses, or should I just take the AP exams of the course that I actually took?

Also, how many AP's do I have to get 5's in to be a AP State Scholar (i live in Mass.)

Most colleges don't give credit for : Human Geo, Environmental Sci...so its more like 7-9 exams, which isn't all that impressive, nowadays.
